I just registered and logged in via localhost:4040, and then I signed in temporarily with the 'admin' password.
After changing my password, I cannot get in anymore...?
I even clicked "forgot password", but it says the username does not exist

Then you must have a typo in U/P.

The easiest thing to do is to just re-install and start over with defaults.

I uninstalled and reinstalled many times, but when I go to localhost:4040, it doesn't give me the option to create/reset

You have to clean out any directories created by the first install. If you're on Windows, delete C:\Subsonic.

When I uninstalled, it says it is deleting C:\madsonic soooo I assumed that it was already being cleared out. I'm not by my computer right now, but I will double check to make sure the directory is gone when I hit uninstall
